Panino al Lampredotto
A Cow's Stomach Sandwich
Il lampredotto is a traditional food in the city of Florence. It is the fourth stomach of a cow and is named after the lamprey eel (la lampreda) because it has a similar appearance.
It is most commonly served as street food in Florence in the form of a sandwich - il panino al lampredotto. To prepare the sandwich, il lampredotto is first boiled in a vegetable broth then chopped and served in a bread bun. The top part of the bread bun is dipped in the vegetable broth. Il lampredotto is sprinkled with salt and pepper then topped with a chilli oil and a green sauce made from parsley and capers - la salsa verde.
